Bison meat is a taste of the prairie. The graphic below shows how it compares nutritionally to other popular meats and to salmon (3.5 oz serving). Our animals are part of a functioning ecosystem, and our herd size has to be kept in balance with the land's carrying capacity. Most years, we butcher one 2-year-old animal. In the future, that number will probably increase. Currently, we offer wholes, halves and quarters for pickup at a southeastern Oklahoma butcher shop. We try to arrange meat sales a year in advance.
